Libian Carrot Salad with Cumin & Lemon

Ingredients

  • 4 large carrots (large dice)
  • 8 g (½ Tbsp) cumin seeds
  • 30 ml (2 Tbsp) extra virgin olive oil
  • 10 g (3/4 Tbsp) chopped fresh garlic
  • 15 ml (1 Tbsp) lemon juice
  • 15 g (1 Tbsp) fresh parsley (chopped)
  • 15 g (1 Tbsp) whole coriander leaves

Preparation

  1. Steam carrots and let them cool. Then place into a bowl with the rest of the ingredients. Mix and allow it to marinate in the fridge for a few hours before serving.
