Forest Berries with Zabaglioni

Ingredients
- 4 egg yolks
- 20 g (4 tsp) sugar
- 60 g (4 Tbsp) Marsala
- 15 ml (1 Tbsp) water
- 100 g (¼ lb) raspberries
- 100 g (¼ lb) strawberries
- 100 g (¼ lb) blueberries
- 100 g (¼ lb) blackberries
- 100 g (¼ lb) red currents
- 4 sprigs fresh mint
- 15 g (1 Tbsp) icing sugar
Preparation
- Whisk the yolks, sugar, Marsala and water together over a double boiler until thickened like pudding (takes about 10 minutes). Take on and off the heat from time to time while cooking so as not to scramble the eggs.
- Mix the berries together and divide between 4 serving bowls. Spoon the zabaglioni sauce over the top of the berries. Use a gas burner to lightly color the surface of the sauce. Garnish with fresh mint, a sprinkle of icing sugar and a few red currants and serve immediately.
