Type of Dish Salad
Ingredients
- 2 heads coss lettuce
- 100 g (¼ lb) tomato (sliced)
- 100 g (¼ lb) cucumber (sliced)
- 30 g (1oz) red bell pepper (1 cm dice)
- 30 g (1oz) yellow pepper (1 cm dice)
- 30 g (1oz) green pepper (1 cm dice)
- 1/2 red onion (1 cm dice)
- 200 g (1/2 lb) feta cheese (1 cm dice)
- 60 g (2 oz)black kalamata olives
- 15 g (1 Tbsp) Italian parsley (chopped)
- 4 g (1 tsp) fresh oregano (chopped)
- 60 ml (4 Tbsp) extra virgin olive oil
- 20 ml freshly squeezed lemon juice
- to taste sea salt
- to taste black pepper
Preparation
- To make dressing whisk together lemon juice, olive oil and season with salt and pepper. Prepare all the vegetables and arrange them in serving bowls. Scatter the Herbs on top and drizzle the lemon dressing on top.
