Fillet of Beef with Saffron Mash & Balsamic Teriyaki Sauce

Ingredients

  • 900 g (2 Lbs) Beef fillet (cut into 4 steaks)
  • 8 large potatoes (peeled and cut into quarters)
  • 1 pinch saffron
  • 200 ml (1 cup) milk
  • 60 ml (4 Tbsp) extra virgin olive oil
  • 1 star anise
  • to taste sea salt
  • to taste black pepper
  • 8 coriander leaves (for garnish)

Preparation

  1. Make teriyaki sauce
  2. Put milk and saffron in a small boil bring to a simmer remove from heat and leave to infuse. Cook the potatoes in plenty of boiling salted water, when soft (check by piercing them with a thin skewer), drain them and push them through a potato ricer. Return potatoes quickly while still hot to the pot add the saffron milk, 30ml of olive oil, salt and pepper to taste and whisk well until completely smooth. (keep mash warm)
  3. Warm up 150ml of teriyaki sauce with one star anise, 1 Tbsp of Balsamic and thicken with 5g of cornstarch mixed with 10 ml of water.
  4. Season steaks with salt and pepper, coat with 30ml of olive oil. Put steaks to cook on a hot grill. I recommend medium rare but cook them to your required degree. When ready remove from grill leave to rest for 5 minutes and then slice into 1 cm thick slices.
  5. To finish, place a large quenelle of hot mash in the center of each plate, lean the sliced beef against it. Drizzle 12ml of hot teriyaki sauce on top of beef and also some to decorate the plate

Teriyaki sauce

Ingredients

  • 500 ml (17 fl oz) chicken stock
  • 250 ml (8 fl oz) mirin
  • 300 ml (10 fl oz) sake
  • 350 ml (12 fl oz) soy
  • 260 g (9 oz) sugar
  • 2 cloves garlic
  • 8 g ginger
  • 1/2 piece onion
  • 1/2 piece leek
  • 1 carrot
  • 1 star anise

Preparation

  1. Mix all ingredients together simmer for 2 to 3 hours (reduce by 30 %)
