Ingredients
- 1 stalk lemongrass (chopped)
- 3 green chilies (chopped)
- 1 shallot (sliced)
- 5 cloves garlic
- 15 g (1 Tbsp) galangal
- 40 g (½ cup) chopped fresh coriander(leaves & stems)
- 40 g (½ cup) fresh basil
- 3 g (½ tsp) ground cumin
- 3 g (½ tsp) ground white pepper (available in most supermarket spice aisles)
- 3 g (½ tsp) ground coriander
- 45 ml (3 Tbsp) fish sauce
- 5 g (1 tsp) shrimp paste(belachan)
- 10 ml (2 Tbsp) lime juice
- 10 g (2 tsp) brown sugar
- 45 ml (3 Tbsp) coconut milk
Preparation
- Pound all ingredients together in a pestle and mortar
